Holiday Cookies Made Simple

We absolutely love this holiday cookie recipe for a few reasons: you don’t need an electric mixer, it’s so fast and easy, kids can use their hands to combine ingredients and roll the dough into balls, it only takes 8-10 minutes to bake, they’re easily transportable, and always a huge crowd pleaser. Go ahead…give them a try!

In one big bowl, mix together:

2.5 cups of flour

2 tsp. ginger

1 tsp. cinnamon

2 tsp. baking soda

1.5 sticks of butter, softened

1 cup of brown sugar

1 egg

1/3 cup of molasses

Mix evenly and thorougly (little hands are of great help and melt butter easily!) and roll into balls. Don’t press the balls down at all, they flatten accordingly on their own while baking. Pre-heat your oven to 350 degrees, and place your baking sheet full of balls in for 8-10 minutes. Cool for a few minutes, then add icing.

Easiest icing ever:

1 cup of confectioner’s sugar

2 tbs. water

1 tiny, small dash of vanilla

Mix together well with a fork until it’s white liquid. Use a regular spoon to dabble a bit on each cookie, which is super fun. Colorful sprinkles follow, lightly over your icing (usually the kids’ favorite part).
